Fill with your favorite meat fillings, or follow my vegan recipe using refried black beans, homemade Mole sauce and homemade guacamole — treat them like a sandwich or fill with leftovers. Made of gluten free masa harina dough, these yummy little purses cradle any savory or sweet filling, and look so rustic, wrapped up in corn husks or banana leaves.
Traditional tamale fillings vary by regions of Mexico, from shredded meat and chiles to brown beans, pineapple and corn, but while the fillings can differ, be sure to use true masa harina for your tamales, not corn meal or corn flour.
Masa harina is treated with lime and water to loosen the corn hulls and soften the corn kernels, making it easier to form into a dough and rendering the rich niacin nutrients in the corn more digestible.
